Atypical aging of white wines is characterized by rapid loss of fruity aromas and the development of unpleasant odours, evoking resin, wax, camphor or honey. This phenomenon may affect all dry or sweet white wines regardless of their origin or grape varieties. Our current research indicates that the compounds listed below can be considered to be responsible for these defects.
